Crockpot Citrus Glazed Carrots


    These carrots are easy to make and are so yummy.  I love the tangy taste that the orange juice provides and the ginger gives it just enough “zing” to really up the flavor profile.

  • 2 lb. carrots, peeled & sliced
  • 1 c. orange juice
  • ¼ c. sugar
  • 1 ½ T. butter
  • 1 tsp. ginger
  • 1 T. parsley, optional
  • ½ tsp. salt
  • ¼ tsp. pepper

Put the carrots in a saucepan and cover the carrots with enough water to be an inch over the top of them.  Turn on the stove to medium-high and bring to a boil.  Once they come to a boil, turn the stove to low and cover the saucepan with a lid and simmer for about 7 or 8 minutes or until the carrots have been cooked all the way through but still have some snap to them.  Drain and leave the carrots in the colander. 

Heat up the butter in the saucepan over medium heat. Once the butter has melted, add the carrots back in and stir.  Pour in the orange juice, sugar, ginger, salt & pepper.  Heat for a few minutes and then top with parsley, if desired, and serve. 

 


 One cup has about 35 carbs.

These go great as a side dish.  I like to serve a green vegetable such as asparagus or zucchini with them when serving these with Barbecue Chicken, Brisket or Pork Chops.

Perfect Taco Baked Potatoes Recipe


Taco baked potatoes are loaded with all your favorite taco toppings.  It combines everything you loved about tacos and stuff them into a lovely baked potato!  So delicious and easy to make.  

 


 

·        4-6 medium Russet potatoes, fully baked & still hot

·        1 lb. ground beef

·        ½ c. shredded Mexican blend cheese or cheddar cheese

·        2 T. homemade taco seasoning (or 1 pkg. taco seasoning)

·        Green onions, chopped (optional)

·        Salsa (optional)

·        Sourcream (optional)

·        Guacamole (optional)

 

In a large skillet, cook the beef over medium heat until it is no longer pink and is cooked throughout. Drain.  Stir in the taco seasoning and ½ cup of water and bring it to a boil.  Reduce heat and simmer for 3-4 minutes.  Be sure to stir it occasionally. 

Cut open each hot, baked potato and fluff the pulp some.  Spoon the taco meat over the top and then the shredded cheese and whatever other toppings you choose.

Classic Grape Salad Recipe


    This is a really creamy salad that takes grapes to a whole new level.  It’s easy to make and is simply irresistible. 

·        3 c. seedless green grapes

·        3 c. seedless red grapes

·        1 c. sour cream

·        1 c. chopped pecans or pecan halves

·        ½ c. sugar or brown sugar, depending on your taste

·        8 oz. cream cheese

·        1 tsp. vanilla

 

Wash & stem your grapes.  Set aside.  

 In a large mixing bowl, combine the sour cream, sugar, cream cheese and vanilla.  Beat well until well combined.

Fold in the grapes and pecans.  

 


 

Serves 6 and has roughly 45 grams of carbs per serving.

Great as a snack or serve it as a side dish.  I often serve it along side pulled pork sandwiches and homemade onion rings.  Makes me hungry just thinking about it.
