      Hello everyone. It's hard to believe that tomorrow is March 1st! Man, this month (and this year) have really flown by!

      Most people remembered it from years ago when their parents or grandparents made it for them.  Some people had never heard of it and many of the younger generation thought it was downright gross.  To each their own but it was a hugely popular and had a LOT of views.

    Because Aloe Vera is so great to have on hand and can be used so many ways, I wanted to preserve it.  By drying it and turning it into a powder, I can use it in a variety of ways and store it for long time usage.


    As usual, the #1 post of all time on my blog is a post I did on frugal living

   I like having many kinds of "mix-in-a-jar" meals around.  My goal is to have 365 of them made up, one for every day of the year.  They are great on days you just feel lazy or anything like that and are perfect for any kind of emergency.

Easy Homemade Tostados

     I love Mexican food.  I make a lot of different Mexican recipes such as Mexican chicken casserole, chicken enchiladas, and beef enchiladas.  Tostados are one of my go-to meals because not only is it quick and easy to make, but it is also really delicious!







 Easy Homemade Tostados

10 tostados shells
1 c. shredded cheese
1 c. salsa or diced tomatoes 
1/2 c. sour cream plus more for topping
1 lb. ground beef (you can use ground pork, turkey, or shredded chicken)
1/2 head lettuce
1 envelope taco seasoning

      In a medium skillet, cook your ground beef with the onions.  Cook meat until it is browned.  Drain off the grease.  Stir in the taco seasoning and 1/4 cup of water.

   Heat up your refried beans and then put in 1/2 cup of sour cream.

      Stir well.



     Lay out your tostados shells. Spread some of the refried bean mixture over the top and make sure to spread it all the way to the edge of each one.  Now sprinkle on a bit of shredded cheese

    Now add some taco meat and sour cream.

    Top it now with some lettuce, salsa, Homemade Taco Sauce or diced tomatoes, depending upon what you are using.  



    Serve  with a side of Spanish rice and some Mexican street corn and then enjoy!

The Best Pumpkin Pie Dump Cake

     I make several different kinds of dump cakes including apple dump cake, cherry dump cake, Oreo Dump Cake and even a double chocolate cherry dump cake.  And each one is absolutely delicious!  Today I whipped up this pumpkin dump cake and it is just as good as the others.  In fact, out of the ones I make, this one is my husband's favorite.

The Best Pumpkin Pie Dump Cake
 1 (29 oz.) can pumpkin puree (NOT pumpkin pie mix)
1 (12 oz.) can evaporated milk
3 large eggs
1 c. butter, melted
1/2 c. white sugar
1/2 c. brown sugar
1 tsp. ground cinnamon 
1/2 tsp. ginger
1/4 tsp. cloves
 
      Preheat your oven to 350 degrees.  Spray a 9'' x13'' cake pan with cooking spray.
 
     In a medium sized bowl, combine the pumpkin, milk, eggs sugars and spices until well combined.

 Pour into the cake pan.

     Sprinkle the cake mix over the top.  Drizzle with butter.  Try to get the entire cake mix covered.

    Bake for 55 minutes or until golden brown.

Allow to cool about 30 minutes before serving.  Top with some whipped cream and enjoy!
 

 

    Serves 12 and each serving has 56 carbs.

No-Bake Peanut Butter Cheerio Bars

     Forget Rice Krispies treats...these are even better!  This is the no-bake bar for peanut butter lovers!  These are a classic treat that brings back so many memories.  Make some today and enjoy them as a snack, dessert, or even for a quick breakfast.







No-Bake Peanut Butter cheerio bars


4 c. cheerios (I used multi-grain but plain work too)
3 1/2 c. mini marshmallows
1 c. peanut butter
1/4 c. butter


     
     Lightly butter and 8''x8'' cake pan.  In a medium saucepan on low heat, melt the butter and stir in the marshmallows and peanut butter.  stir continuously.  Allow it to melt completely but be careful and don't let it burn.

     Place the cheerios into a large bowl and stir the melted mixture over the top.  Stir well.

      Pour the mixture into the prepared cake pan.  Be sure to really press the mixture down and compact it.

          Allow it to cool for about 30 minutes and then cut and serve.  It's that easy!

How to Make Salmon Patties

      

     Salmon patties were a meal my Mom made about once a week when I was growing up.  I was talking to Ron (my hubby) about it recently and he said they had it frequently growing up too.  He said he really would like it again so I whipped them up and he loved it.  If it's been a long time since you have had some too, why don't you follow my recipe and make up a mess!

           They are easy to make and are delicious for lunch or supper.  If you follow my recipe they will turn out perfectly each and every time.  They are crispy and golden on the outside and flaky and tender on the inside.


How To Make Salmon Patties
 
 1 (14.75 oz.) can pink salmon
1/2 c. Panko bread crumbs 
1/4 c. Parmesan cheese
1/4 c. mayonnaise
1 egg, beaten
1-2 T. olive oil
1/2 tsp. lemon juice
1/4 tsp. pepper
1/4 tsp. dill
 
    Open the can of salmon and drain it.

     I always like to pick out the "good stuff" from the "bad stuff" when it comes to salmon.  I don't like the black parts or the spine, etc.  So I pick all that out and throw it away.  You can keep everything together and use it all but I prefer not to.
 
     Now, put the salmon into a medium sized bowl and use a fork to break it up some.  Stir in the rest of the ingredients, except for the olive oil, and mix well.

     Pick up a small handful and pat and shape into patties.  I make mine about 3/4'' to 1'' thick.  If they are too dry, add a touch more mayonnaise.

      Place the olive oil in a cast iron skillet and heat the oil up on medium-high heat.  Once the oil is nice and hot, place 2-3 salmon patties into the skillet.  Cook them until one side is golden brown, then flip them over gently and cook the other side until they are golden brown.  Each side takes about 3-4 minutes to cook, depending on the thickness of the patties and temperature of your stove.

      Place the cooked patties onto a paper towel covered plate to drain the patties and then serve.  I like to serve salmon patties with asparagus or baked beans and some French fries.
 

 

     Each salmon patty has 20 grams of carbs.
