Old Fashioned Creamed Tuna on Toast

     Today I am going to share with you the old fashioned recipe for Creamed Tuna on Toast.

    This recipe goes way back to the Great Depression when times were super tough and people had to make do with what was available.  You fed your family with what you could with the little money and little groceries that were on hand.

     I love making this for my family because it really is pure comfort food.  It's called "creamed tuna" but it's really more like tuna "gravy".   Times are not as tough as they were doing the Great Depression but our family still loves it and I try to make it for them at least 2-3 times a month.  How long has it been since you have had it?


Creamed Tuna on Toast

 2 c. milk
1 c. peas
1/2 c. shredded cheese
1/4 c. flour
1 (8 oz.) can of tuna, drained
4 T. butter
1/2 tsp. salt
1/4 tsp. pepper
Toast

   In a medium sized pot, melt the butter over low to medium heat.

     Stir in the flour, salt and pepper.  Allow it to cook for about a minute or two. Stir it as it cooks. 

        Slowly pour in the milk, stirring constantly.  Keep stirring until it begins to thicken.

        Pour in the tuna and peas.

    Stir well and add in some shredded cheese.  Today we used Mozzarella  but I usually use cheddar.

  Stir, remove from stove and ladle the creamed tuna mixture over a few pieces of toast and enjoy!

    This is equally good over some homemade biscuits, toast points, potatoes, pasta, or even rice.  

Makes 4 servings and each serving has 23 grams of carbs.

The Very Best Peanut Butter Kiss Blossoms

     I love these cookies!  They are so easy to make and create a soft, chewy and delicious tasting cookies!  They are my favorite cookie to make (and eat) at Christmas time but I not only make them during the holidays.  I make sure to make these a few times a year.  
 


The Very Best Peanut Butter Kiss Blossoms

 1 & 3/4 c. flour
3/4 c. creamy peanut butter
1/2 c. sugar, (plus a bit more for rolling the cookies in before baking)
1/2 c. brown sugar
 1/2 c. shortening 
 48 Hershey's kisses, unwrapped 
1 egg
2 T. milk 
1 tsp. vanilla 
1 tsp. baking soda
1/2 tsp. salt
 
     NOTE: If you do not want to use shortening in the recipe, you can substitute it out with real butter.  But using shortening will allow your cookie to stay soft and chewy.
 
     Preheat your oven to 375 degrees.  In a large bowl, mix all the ingredients (except for the kisses) together.  Mix well until a dough is formed.
 
     Shape the dough into 1" balls and roll each ball in sugar.  Place each ball about 2" on an un-greased cookie sheet.

    Bake for 10-11 minutes or until golden brown.  Remove and immediately top each cookie with a Kiss candy.  Place the Kiss in the center and gently press down.
 
     I always eat one (or two) of the cookies while they are warm but you can also allow the cookies to cool before eating.  The Kiss candy will harden as they cool.

Crock Pot Creamy Italian Chicken

      This Creamy Italian Chicken has so much flavor and is super easy to cook in your crock pot.  It turns out so creamy and has just the right amount of Italian flavor.





    This makes a really delicious and hearty meal that everyone in your family will love.  It is so versatile also.  You can serve it over mashed potatoes, Linguine, rice, or noodles.  It tastes a bit different when you serve it over a variety of things so your family should never tire of it.  I love to it with some asparagus and a glass of iced tea.

    For my recipe, I used my homemade cream of chicken soup and my homemade Italian dressing mix.  You can find the recipes for each by on each of their names.  You can use store bought versions of each, but I guarantee the homemade versions are 100 times better.


Crock Pot Creamy Italian Chicken 


4 Med. boneless & skinless chicken breasts
2 batches of homemade cream of chicken soup, or 2 cans of store bought  
8 oz. pkg. cream cheese, softened 
1/4-1/2 c. milk
2 T. homemade Italian dressing mix, or 1 envelope store bought 
1 T. parsley 
1/2 tsp. pepper
      
     Spray your crock pot with some cooking spray or rub some oil lightly over the inner surface.  Place your chicken into the crock pot.  Sprinkle on the pepper.  Pour in your cream of chicken soup and then sprinkle on the Italian dressing mix

     Next, cut your cream cheese into cubes and spread them out evenly over the top.  Slowly sprinkle on the parsley.

    Put the lid onto your crock pot and turn to low and allow to cook for about 5-6 hours.  If you prefer, you can turn it to high and cook it for 4 hours.
 
    After the recommended time, shred the chicken with 2 forks and stir the mixture well.  If it is too thick, stir in some milk.  Serve it over mashed potatoes, pasta, or rice and enjoy!   




     And my oldest son says that the leftovers are really good eaten between bread as a cold sandwich.

The Best Italian Dressing Mix

     I love making up homemade seasoning mixes.  They take only a few minutes to whip up and taste so much better than store bought.  On top of that, I control what goes into them and that is important to me and my family.
 
 



    This seasoning mix can replace one envelope of purchased Italian seasoning mix or just sprinkle it over fish, pork, chicken, vegetables, pasta or over a garden salad.  There are so many ways to use it.  I personally love using it in my Crock Pot Creamy Italian Chicken.  I love the flavor that it adds to all my dishes!


The Best Italian Dressing Mix

2 T. oregano 
1 T. garlic powder
1 T. onion powder
1 T. parsley
1 T. basil
 1 T. rosemary
1 T. sugar
1 tsp. salt
1 tsp. pepper
1 tsp. thyme 
1/4 tsp. celery salt
 
    Combine all the ingredients together and store in a baggie or mason jar until ready to use.  Two tablespoons of the dry mix equals one envelope of store bought mix.

   If you want to make this into a salad dressing, you whisk together 2 tablespoons of the mix with a 1/4 cup of white vinegar, 2/3 cup of olive or canola oil, and 2 tablespoons of water.  And I like to add in a tablespoon or two of Parmesan cheese.  Shake well and enjoy!  





    Other dressings that I make from scratch include:  Catalina dressing, Ranch Dressing, Homemade French Dressing and Oil and Vinegar Dressing.

Homemade Bean Dip

     This homemade bean dip is jammed pack full of creamy goodness.  It's so good that you wont be able to stop eating it.  It's so darned good!  I use my recipe of homemade refried beans to use in this recipe but you can use store-bought refried beans if you want.  Whichever you use, it will be a hit.  It's so good with corn chips or on tortillas or in a homemade burrito.
 




Homemade Bean Dip

2 c. refried beans or 1 (16 oz.) can
2 c. shredded cheese (I used Fiesta blend)
1/2 c. sour cream
1 (15 oz) can petite diced tomatoes, drained
4 oz. softened cream cheese
1 T. taco seasoning or 1/2 c. salsa



     Preheat your oven to 325 degrees.  Add all the ingredients into a large bowl but reserve back 1 cup of cheese.

    Stir well.  Spread the mixture out into an 8"x8" cake pan or baking dish.  Sprinkle the reserved cheese on top.  Bake for 12-15 minutes or until cheese is melted and mixture is hot.
    
    Remove and serve with corn chips and enjoy!

    This can be heated in the microwave if you prefer.  Just place in a microwavable safe dish and heat on high for 5-7 minutes.  Be sure to stir every 2 minutes.

Old Fashioned Rice Pudding

      Rice pudding is creamy, sweet, delicious and just perfect.  It really is the ultimate comfort food.  My recipe adds the classic combination of cinnamon and raisin to make the classic recipe even better.  It has the perfect texture together with the soft rice and chewy raisins, so follow my recipe and whip you up this old time favorite dessert today!

Old Fashioned Rice Pudding
 4 c. milk
1 1/2 c. rice
2/3 c. sugar 
1/2 c. raisins
1 T. butter
2 tsp. vanilla
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
     Place the milk, rice, and salt into a medium sized pot.  Turn the heat to medium and bring to a simmer then turn to low; stirring occasionally.

     Allow it to cook until the rice is tender.  It should take about 10-15 minutes, depending on your stove.
