This creamy cauliflower salad makes the perfect side dish. It has a great combination of flavors that is easily adaptable to meet your personal tastes. For example, add in some sliced jalepenos, cooked bacon, or some chives but I personally think it is perfect as-is!
· 1 head of cauliflower
· ½ head of broccoli
· 1 c. mayonnaise
· 1 c. frozen peas
· 1 c. cheddar cheese, cubed or shredded
· ½ c. sour cream
· 1 envelope ranch dressing mix (or use homemade)
· 1 tsp. lemon juice
· ½ tsp. garlic powder
· ½ tsp. salt
· ¼ tsp. pepper
Cut around the stem of the cauliflower head and try to take out as much of the core as you can. Once that is done, you can break down the rest of the cauliflower into small florets and cut off any excess stems. Do the same with the broccoli. Once you have the florets, place them into a bowl and add in your peas and cheese. Stir in the rest of the ingredients and make sure everything is coated well. Refrigerate for a few hours before serving.
Serves 8 with each serving having about 10 carbs.
You can use pre-cut cauliflower florets and if you do, use about 4 cups.
