If you are looking for a hearty, tasty and filling breakfast idea, look no further. Kids and adults both love them and I have even taken them to ladies brunch and they were a hit.
- 1 pkg. (32 oz.) frozen tater tots
- 1 c. shredded cheese (we use sharp Cheddar or Colby Jack)
- ¼ c. milk
- 8 eggs, beaten
- ½ lb. breakfast sausage, cooked and crumbled
- ½ tsp. pepper
- ¼ tsp. salt
- Diced onion, optional
- Diced bell peppers, optional
NOTE: Instead of breakfast sausage you could use diced ham or cooked crumbled bacon.
Preheat your oven to 400 degrees. Grease the bottoms and sides of muffin tins. Defrost some tater tots in the microwave and once thawed, place 3 in the bottom of each tin.
Use a cup, bottle, or rolling pin end to “smash” the tater tots down a bit.
Place the muffin tin into the oven and bake for 10 minutes.
Remove the muffin tin from the oven and turn the oven down to 350 degrees. Sprinkle in some of the sausage into each tin. In a bowl, whip together the eggs, milk, salt and pepper. Pour this mixture on top of the sausage and then sprinkle on the cheese.
Bake for 20 minutes or until the eggs are done.
