Coffee Jelly!

   The other day, I shared on my FB page that I had just made some Coffee Jelly for my hubby and MANY of my followers requested the recipe.  Here it is for y'all to enjoy!


Coffee Jelly Recipe, uses for coffee, unusual flavors of jelly,

Coffee Jelly

4 cups VERY strong brewed coffee
1/4 c. lemon juice
5 1/2 cups sugar
1 box Surejell

     Stir the coffee, lemon juice and Surejell together in a large pot.  Bring to a boil over high heat.  As you are waiting, prepare your jars by either running them through the heat cycle of your dishwasher; boiling them for 10 minutes; or putting them in a warm oven for 15 minutes.  Also, put on a pot of water to boil for processing.   Once the coffee reaches a full boil, stir in the sugar and return to a boil and let it boil for one minute.  Remove the pan from heat and ladle it into the hot prepared jars.  It should make 6 of the half-pint jars.  Water bath can the jars for 10 minutes. 

This coffee jelly goes great with biscuits or pancake muffins

Egg Salad Recipe

      Since we have our own chickens, we have a LOT of eggs so we eat a lot of eggs too.  We have eggs for breakfast nearly every morning (scrambled, fried, poached, over easy or we make omelets).  We even freeze some of our eggs.  One way we love to have eggs for lunch is by having egg salad sandwiches (which are soooooo good).

Egg Salad
 12 boiled eggs
1 c. mayonnaise
2 T. brown mustard
2 T. dill pickle relish
1 T. parsley flakes
1 T. lemon juice
1 tsp. tarragon
1 Tsp. onion powder
1/2 tsp. salt
1/2 tsp. celery powder
1/4 tsp. pepper

     Peel the eggs and chop them up into small pieces and place them in a large bowl.  Add the other ingredients and stir well.  Refrigerate one hour and then enjoy.  This is delicious by the spoonful, on a sandwich or served with crackers.  Nice & creamy too!
 So great to add in some homemade guacamole.

Extra Crispy French Fries

   Our family loves french fries...especially if they are homemade and nice and crispy.  We have figured out the key to this and thought we'd share what we have learned.

      To do this, you can use frozen fries you have purchased or just peel up some potatoes and slice them (thick or thin, whatever you prefer).  Once the fries are cut, soak them in a bowl of water with 2 tsp. of corn syrup. If you are soaking a lot of french fries, just add a bit more corn syrup.  Place the bowl in the refrigerator for 30-45 minutes.

How to make crispy fries like McDonalds, extra crispy french fries

     Remove, drain and heat your french fryer until it is nice and hot.  Carefully drop in the french fries (a few at a time) and fry them for exactly 90 seconds.  Remove from the hot oil and refrigerate for 15 minutes.  After 15 minutes, add them to hot oil and fry them until done.

    I know it sounds like a big ordeal but it is well worth the extra time and effort.

    Now that you have some nice and crispy fries, how about topping them with some chili and have some chili cheese fries???

Honey Glazed Carrots in the Crock Pot


These honey glazed carrots are so delicious.  I made 2 pounds to go with our supper and my family of four at them all.  Not even one carrot coin was left over...they are THAT good.

     You will need:

  • 2 pounds of carrots, cut into carrot coins
  • 1/3 c. honey
  • 1/4 c. of butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

    Spray the inside of your crock pot and turn the crock pot onto high.  Place the carrots into the crock pot and pour on the melted butter and honey.  Sprinkle on the spices and place the lid back on the crock pot.  Cook for 4 hours.


These carrots go really well with Meatloaf or a Cheeseburger Casserole.
