This is an easy recipe that turns into a very refreshing & delicious strawberry cream pie! So simple to make that even the most inexperienced baker can do it. It’s a perfect summertime treat that is perfect for picnics and barbecues.
- 1 pkg. (24 oz.) frozen sweetened strawberries, thawed
- 1 pkg. shortbread pie crust
- 1 ¼ c. whipping cream
- ¼ c. powdered sugar
- ¼ c. cornstarch
In a medium saucepan, stir together the strawberries and the cornstarch. Cook over medium heat, stirring constantly, until the mixture begins to boil and then cook for 2 full minutes longer. Remove from heat.
Allow the strawberries to cool for about 15 minutes and then pour into the pie crust. Place the pie into the refrigerator for 2-3 hours. Place a medium sized mixing bowl and beaters into the refrigerator also so they can cool.
After 2 hours, beat together the whipping cream and the powdered sugar together in the chilled mixing bowl. Beat until the mixture forms stiff peaks. Spread over the chilled pie. Cut, serve and enjoy!
