Cheesy Sloppy Joe Casserole Recipe

            This cheesy sloppy joe casserole takes the great flavors of sloppy joes and puts them into a tasty casserole.  Easy to make and is delicious and flavorful!  It’s a great comfort food and is always a hit at potluck dinners.   

·        1 lb. lean ground beef

·        2 c. sloppy joe sauce (homemade or a 15 oz. can)

·        1 ½ c. shredded Cheddar or Colby Jack cheese

·        Cornbread batter

·        1 can corn, optional

·        1 T. dehydrated choppedonions

·        ¼ tsp. pepper

 

Preheat your oven to 350 degrees. 

In a large skillet, cook your ground beef with the onions over medium-high heat.  Cook until the meat is browned and no longer pink.  Once the meat is done, stir in the sloppy joe sauce, corn, if using, and the pepper.  Heat on low, stirring often.  Remove from heat and stir in the cheese and continue stirring until the cheese has melted.

Pour the mixture into a 9”x13” cake pan (or casserole dish) and top with the cornbread batter.  Bake for 23-25 minutes or until cornbread is golden brown. 

I often cook this with rice too.  If I use rice, I stir in 3 cups of cooked rice and then add in the cheese.  I do not use cornbread batter if I use the rice.  Both ways are super delicious.  



  I like serving some creamed peas or asparagus with this casserole.  

 


 


    If I make this recipe with the rice instead of cornbread, I serve some potato rolls on the side and a nice wedge salad
