If you love snickerdoodle cookies, you will love these snickerdoodle muffins. This are soooooo delicious. They are great for breakfast, snacks or dessert. Everyone who tries these love them and I am sure you will too.
For the muffins:
· 2 c. all-purpose flour
· ¾ c. sugar
· ¾ c. milk
· ½ c. butter, melted
· ½ c. sour cream
· 2 lg. eggs
· 2 tsp. vanilla
· 2 tsp. baking powder
· 1 tsp. cinnamon
· ¾ tsp. cream of tartar
· ½ tsp. baking soda
· ½ tsp. nutmeg
· ½ tsp. salt
For the topping:
· 3 T. sugar
· 2 T. butter, melted
· 1 ½ tsp. cinnamon
Preheat your oven to 350 degrees. Spray muffin tins or use cupcake liners.
In a mixing bowl, cream together the sugar and melted butter. Beat until it is creamed nicely. Add in the vanilla and the eggs one at a time until each one is incorporated well. Now with the mixer on low, add in the milk and sour cream. The flour and the other dry ingredients can be added and mix just until combined.
In a small bowl, mix together the topping ingredients. Now using a cookie scoop or ice cream scoop, scoop up the muffin batter and drop the scooped batter into the topping mix and roll each dough ball around until well coated and then put each one into the muffin tin. Bake for 20-22 minutes or until golden brown. Serve warm.
Some other great muffin recipes I have include: Pancake Muffins, Applesauce Puffs, Blackberry Muffins and Pumpkin Muffins.
