The Best Soft Chocolate Chip Pudding Cookies


    These cookies are super soft, chewy, and delicious.  The added pudding keeps the cookies soft and makes them hard to resist.  Each bite is perfection.

 


·        2 ¼ c. all-purpose flour

·        1 c. milk chocolate chips

·        1 c. semi-sweet chocolate chips

·        1 c. butter, softened (2 sticks)

·        1 c. chopped walnuts, optional

·        ¾ c. brownsugar

·        ¼ c. white sugar

·        3.4 oz. instant vanilla pudding mix

·        2 lg. eggs

·        1 tsp. vanilla

·        1 tsp. baking soda

·        ½ tsp. salt

 

NOTE:  I have down to use 1 cup of milk chocolate chips and 1 cup of semi-sweet chocolate chips but you can just use 2 cups of one kind or the other if you prefer.  

 

            Preheat your oven to 350 degrees.

            In a large mixing bowl, cream together the butter, sugars, and the DRY pudding mix.  Once they have been creamed together well, beat in the eggs and the vanilla.  Mix in the flour, baking soda and salt on low and mix until just combined.  Now fold in the chocolate chips and nuts, if using.

            Drop by spoonfuls onto a cookie sheet and bake for 9-10 minutes.  They may not look fully baked but they will continue to cook some once removed from the oven.  You do not want to over bake these.  Serve with a cold glass of milk and enjoy!


             Feel free to substitute other flavors of pudding mix.  I have tried it with instant chocolate pudding and instant butterscotch pudding.  Both are good but my favorite remains making them with the instant vanilla pudding.
