Cooking baked potatoes in the crockpot is the easiest way to cook them. They come out perfectly and taste wonderful. I doubt I will ever cook another baked potato in the oven again!
Baking potatoes
2 T. extra virgin olive oil
Salt to taste
Grab as many sheets of aluminum foil as you have potatoes. Rub olive oil all over each potato and then sprinkle each one with salt and then wrap each potato up tightly. There is no need to prick the potatoes with a fork.
Place the potatoes into your crockpot and turn the crockpot onto high. I usually make 10-12 baked potatoes at once so we have them to eat over several days and sometimes I use the baked potatoes in other dishes such as mashed potatoes or in a casserole to save myself some time. You can stack the potatoes onto one another with no problem.
Bake for 2 ½ hours or if you have a lot in there, cook for up to 4 hours. To see if they are done, I use a pot holder or hand towel and using it, I gently squeeze each potato to see if they are done.
They are then ready to eat. If you prefer a bit of crisp skin, just broil the potatoes for a minute or two.
Top with your choice of toppings such as butter, sour cream, chives, cheese, or even chili. They are a meal all their own or use as a side dish to a lovely steak or to a ranch coated pork chop.
