A delicious salad that is easy to make with fresh ingredients that is easily customizable to your personal taste. This salad has it all…sweet, crunchy, salty and really refreshing. Turns out beautiful and tastes fantastic.
- · 6 c. baby spinach
- · 2 sm. apples, cut into bite sized pieces (Granny Smith or Honey Crisp)
- · 2/3 c. feta cheese, crumbled (or ½ c. blue cheese or goat cheese)
- · ½ c. pecans or walnuts, chopped or halved
- · ½ c. dried cranberries
- · ¼ tsp. salt
- · ¼ tsp. pepper
- · Cooked and crumbled bacon, optional
Wash and pat dry your spinach. Place in a large salad bowl.
Submerge your cut apple pieces into a bowl of water and add to the water, 2 teaspoons of lemon juice. Let them soak for 3-5 minutes and the rinse. This step is optional but will keep the apples from turning brown.
Add the apples and the rest of the ingredients with the spinach and toss with your favorite salad dressing. I like mine with a simple oil and vinegar dressing.
