All you need to make a really delicious guacamole is a few ingredients. It is great to serve as a dip with some tortilla chips or serve it on top of tacos to up your Taco Tuesday night’s dinner.
· 6 avocados
· 1 lg. tomato, diced
· 1 sm. white onion, diced
· ½ c. picantesauce or salsa
· 2 T. cilantro, finely chopped
· 1 T. lime juice
· ¼ tsp. salt
· Pinch of pepper
Cut avocados in half and remove the pit. Scoop out the pulp from the avocados and mash the pulp well. Mix in the other ingredients and stir well. Serve.
This makes a chunky, yet creamy guacamole. If you prefer, you can place the ingredients into the food processor and pulse well to make a really creamy guacamole.
Serve on top of nachos, as a side for Enchiladas, with my Chicken Taco Casserole or mix it into a Tuna Salad or Egg Salad.
