This is a super yummy salad is a texture and taste sensation. It’s really easy to make and is hard to resist.
- 4-5 c. chopped broccoli (about 2 heads)
- 2 c. shredded cheddar cheese
- 1 c. mayonnaise
- 1 c. golden raisins
- ½ c. dried cranberries
- ½ c. sunflower kernels
- ½ c. sugar
- ½ c. white distilled vinegar or apple cider vinegar
- ½ c. cherry tomatoes, halved
- ½ lb. bacon, cooked and crumbled
- 1 red delicious apple, sliced
Place the broccoli into a large bowl. Add in the cheese, raisins, cranberries, sunflower kernels, tomatoes, bacon and apple.
In a small bowl, mix together the mayonnaise, sugar and vinegar. Stir well and then pour over the broccoli mixture and stir to coat well. Refrigerate at least 2 hours before serving.
It is always a hit at potluck dinners. Other dishes that I take to potlucks include: Egg Salad, Ham Salad & Southern Pimento Cheese Spread.
