How to make Oil and Vinegar Dressing

I love oil and vinegar dressing on my salad and my sandwiches.  It is simple to make and tastes delicious.  Although it oil and vinegar dressing contains more than just oil and vinegar, it is still easy to make and tastes really complex and delicious. 

Many people use a 1 part vinegar to 2 part oil ratio when making theirs, I prefer to use a 1 part vinegar to 1 ½ parts oil.  When making it my way, you get a much brighter flavor in my opinion.  So when I mix mine up, I use ½ of vinegar or lemon juice and then ¾ cup of extra virgin olive oil.  

 


 
¾ c. extra virgin olive oil

¼ c. red wine vinegar

1 tsp. sugar

1 tsp. salt

½ tsp. pepper

 

                Place  all the ingredients together into a bottle and shake well.  It can be stored in the refrigerator for up to 7 days.  Be sure to shake it well before each use. 

                I generally use red wine vinegar when I make it but you can also use apple cider vinegar or white vinegar if you prefer.  I do not like mine with the white vinegar but you might.  Making it with white vinegar makes it too tart for my liking.

            When it comes to oil, you can use any neutral tasting oil but I prefer mine with olive oil.  Any canola oil, vegetable oil or even coconut oil can be used.

Homemade Spanish Rice Mix

    I love making my own mixes, such as potato soup mix, chicken and rice soup mix, Rice-a-roni mix and others.  They are less expensive than the store bought varieties and when I make my own, I know what is in them.  I generally have everything on hand that I need to mix them up and the mixes taste so much better than the store bought ones too.

            This mix makes into an easy and tasty recipe in a short amount of time.  The Spanish rice goes great with Tex-Mex meals such as beef enchiladas or chicken enchiladas or even tostados. Try it as a side dish to a beef or shrimp dish.  So flavorful and convenient!


 

Mix all of the ingredients together in a Mason jar and store in your pantry until you are ready to use it.

When you are ready to make Spanish rice, you will need:

·        1 jar of Spanish Rice mix

·        2 c. chicken broth or chicken stock

·        2 T. butter

Brown the butter in a skillet then add in the mix and broth.  Cook and stir often until the rice is cooked through and the liquid has been absorbed (about 20 minutes). Top with some fresh cut chives and sour cream or just plain.  It is great either way. 

 


 

Serves 6.  Makes the same amount the box variety would. 20 carbs each.

The Best Homemade Marinara Sauce

    Our family loves Italian food.  We make a lot of spaghetti and meatballs, bread sticks, and all other kinds of pasta dishes.  We use this marinara sauce recipe for all of them.  It is so versatile and delicious and makes the perfect dipping sauce.  It turns an ordinary dinner into something extraordinary. 

 


  • 29 oz. can tomato sauce
  • 28 oz. can crushed tomatoes
  • 2 (6 oz.) cans tomato paste
  • 2 T. olive oil
  • 2 T. minced onion
  • 2 tsp. oregano
  • 2 tsp. basil
  • 1 tsp. minced garlic
  • 1 tsp. parsley
  • 1 tsp. sugar
  • Parmesan cheese, for garnish

In a sauce pot, add in the tomato products (do NOT drain the crushed tomatoes). Add in the herbs, onion and garlic.  Stir and bring to a boil over medium-high heat.  Reduce to low, put a lid on the pot and simmer the sauce for 30 minutes, stirring occasionally. 

After it has simmered for 30 minutes, add in a bit of sugar at a time to balance the acidity of your marinara sauce.  When it is perfect, serve over pasta, a casserole or use it for a dipping sauce for breadsticks or garlic bread, etc.  You can add in some cooked ground hamburger and make it a meat sauce too.  Yum!  It also pairs well with our Easy Pizza Quesadillas.

 


 

Freezes well.

Makes 6 cups of sauce and serves 12.
