Homemade Doughnuts

    This is my recipe for homemade doughnuts.  These doughnuts are light and super delicious.

Homemade Doughuts

   Take 2 pkgs. of yeast and place in a bowl.  Add in 1 tsp. of sugar and 1/2 c. really warm water.  Stir and let it activate for 10 minutes.  Meanwhile, you will also need:
 
4 c. flour
3/4 c. milk
1/3 c. shortening
1/4 c. sugar
2 eggs
1 tsp. salt

                                          

   Scald your milk and shortening together in a small pot.

    Once they are scalded, pour into a mixing bowl and stir in the sugar and salt.  Add your flour, eggs, and activated yeast mixture.  Stir well; transfer to a table top or counter top.  Knead the dough.  Spray your mixing bowl with cooking spray and place the dough inside; place in a warm area and let rise until doubled.  

    Roll out the raised dough 1/4-1/2" thick and cut into doughnuts.  I do not have a doughnut cutter so I used my biscuit cutter and then the "hole" I used the lid to my vanilla.  It worked nicely.

     Place the cut doughnuts onto a sprayed cookie sheet and let them rise for about 30 minutes.  

   Drop doughnuts into hot oil until done.  

    Dust the cooked doughnuts with powdered sugar or mix up some cinnamon sugar and sprinkle on the doughnuts or make a glaze.

Glaze:
3 T. milk
1/2 tsp. vanilla
 
Mix well and drizzle over doughnuts.

Cheesy Ham & Potato Casserole

   This is another family favorite of ours.  It is a quick, easy and fulfilling meal (especially if you serve it with some homemade biscuits!)

Cheesy Ham & Potato Casserole
 
8 oz. pkg. of sour cream
1/4 c. water
2 small cans ham (like tuna cans)
1/4 tsp. pepper
28 oz. pkg. diced potatoes
1-2 c. shredded cheddar cheese

   Mix all ingredients together and pour into a sprayed cake pan (9 x 13).  Place in a preheated 375 degree oven for 45 min.  Simple, easy and delicious!

Lila Rose Review

    I recently had the opportunity to review a Lila Rose Flexi Clip to try out.  I had never really heard of Lila Rose but went and looked around the site and they had some lovely products.  I spoke with a great consultant and loved what they had to offer.  You can go click here to see what I am talking about.

The Best Oatmeal Raisin Cookies recipe

   I have been making these Oatmeal Raisin cookies for years and no matter what event or occasion I should make them for, I am ALWAYS asked for my recipe.  These are soft, chewy and delicious.  I figured it was about time I shared them with you all.  :-)

Oatmeal Raisin Cookies

                            2 c. flour                               1 tsp. baking powder
                            1 tsp. baking soda                 1 tsp. salt
                            1 c. softened butter               1 c. sugar
                            1 c. brown sugar                   1 tsp. cinnamon
                            2 tsp. vanilla                         2 lg. eggs
                            1 1/2 c. raisins                      3 c. oats 

     Preheat oven to 350 degrees.  Combine all ingredients in a large bowl.  Stir well.

 Drop by spoonfuls onto a sprayed cookie sheet and bake for 10 minutes.  Enjoy!  
Makes 4 dozen cookies.

Red Rangers Update

   As you may remember, I received baby chicks from Hoover's Hatchery awhile back.  These are the fastest growing chicks that we have ever raised.  They are nice and plump and I can't wait to try butchering one to see how they taste.  We plan on butchering next week
