Rotel dip is a classic recipe that belongs in everyone’s party appetizer rotation because it is delicious and has been around for decades. It is so creamy, cheesy and bold in its flavors. It is perfect for parties, game day festivities or just for a family gathering on movie night.
- 1 lb. lean ground beef
- 16 oz. Velveeta cheese
- 10.5 oz. can Rotel tomatoes with green chilies
- 1 envelope taco seasoning
Turn on your crock pot to high and replace the lid. In a skillet, brown the ground beef. Once it is browned, drain off the grease and stir in the taco seasoning and ½ cup of water. Stir and allow it to heat up over medium heat for about 5 minutes.
Cut up the Velveeta cheese into about 1” cubes. You don’t have to cut it that small but it melts quicker and more evenly if you do. Once it is all diced up and the crock pot has begun to get hot, turn the crock pot to low and put the cubed cheese in, along with the contents of the can of Rotel. Pour the juices in also. It adds flavor. Now, pour in the meat mixture, stir and replace the lid and allow it to cook for about 1 ½-2 hours.
Serve with tortilla chips, toasted bread, or even crackers. It is so good anything you can dip into it would be good.
You can add in some chopped black olives, green onions, jalapeños, black beans and you can substitute the ground beef with some shredded chicken, ground sausage or even ground turkey.
