Homemade Bean Dip

     This homemade bean dip is jammed pack full of creamy goodness.  It's so good that you wont be able to stop eating it.  It's so darned good!  I use my recipe of homemade refried beans to use in this recipe but you can use store-bought refried beans if you want.  Whichever you use, it will be a hit.  It's so good with corn chips or on tortillas or in a homemade burrito.
 




Homemade Bean Dip

2 c. refried beans or 1 (16 oz.) can
2 c. shredded cheese (I used Fiesta blend)
1/2 c. sour cream
1 (15 oz) can petite diced tomatoes, drained
4 oz. softened cream cheese
1 T. taco seasoning or 1/2 c. salsa



     Preheat your oven to 325 degrees.  Add all the ingredients into a large bowl but reserve back 1 cup of cheese.

    Stir well.  Spread the mixture out into an 8"x8" cake pan or baking dish.  Sprinkle the reserved cheese on top.  Bake for 12-15 minutes or until cheese is melted and mixture is hot.
    
    Remove and serve with corn chips and enjoy!

    This can be heated in the microwave if you prefer.  Just place in a microwavable safe dish and heat on high for 5-7 minutes.  Be sure to stir every 2 minutes.
