Ronny, my youngest son, absolutely LOVES macaroni and cheese. He could eat it every day and never complain. It is a pain to prepare a whole box of macaroni and cheese so I wanted to come up with a single serving mug version that he could make himself. He is autistic but still can make this with no problem. I also like this recipe uses real cheese and not the powdery stuff that comes with the box versions. It is less “processed” so that is good too.
- ½ c. shredded cheddar cheese
- 1/3 c. elbow macaroni or pasta of your choice
- 1/3 c. water
- 2 T. milk
- 2 tsp. butter
- 1 tsp. Parmesan cheese
- Salt and pepper to taste
Spray the inside of a large microwave safe mug with cooking spray. Put the macaroni, water, and butter into the mug and microwave for 2 minutes. After the 2 minutes, stir. Most of the water should be absorbed by the macaroni at this point, if not, microwave in 30 second intervals until all the water is absorbed.
After the water is absorbed, add in the shredded cheese, milk and Parmesan cheese and stir. Microwave for 30 seconds and stir. If the cheese is all melted, stir, sprinkle with salt and pepper and enjoy. If it isn’t all melted, microwave for another 30 seconds or so.
This makes one serving with about 20 carbs per mug.
