Glazed Orange Juice Bread Recipe


            I love making quick breads because of the ease they are to make.  This one is no exception.  It is really easy to make and has an amazing, refreshing and bright orange flavor. 

For the bread:

  • 1 ½ c. all-purpose flour
  • ½ c. butter, softened
  • 1 ¼ c. sugar
  • ¼ c. orange juice
  • ¼ c. milk
  • 2 lg. eggs, beaten
  • Zest from 1 orange
  • Zest from 1 lemon
  • 1 tsp. baking powder
  • ¼ tsp. salt

For the glaze:

 

 


Preheat your oven to 350 degrees.  

In a large bowl, cream the sugar and butter together and then add in the eggs one at a time and mix well.  Mix in the flour, baking powder and the salt.  Add in the orange juice and the milk but just mix it until it is combined.  Finally, stir in the orange and lemon zest.

Pour the batter into a greased 9”x5” bread pan and bake for 45-55 minutes or until a toothpick inserted into the center of the loaf comes out clean.  Let the loaf cool for about 15-20 minutes.  As it is cooling, prepare the glaze by mixing the ingredients together and then drizzling it over the cooled loaf. 


 

Serves 12 and each serving has about 40 carbs.
