Southern Turnip Green Salad Recipe

 


    Even though I was born and bred and remain in Oklahoma, I have never liked turnip greens.  Recently I decided to try fresh turnip greens in a salad and I loved it.  It makes a lovely salad that can be used as a side dish or make it a meal all its own.  It is versatile too.  You can add any fresh vegetable to it you like. 

 

8 c. baby spinach

5 c. chopped fresh turnip greens (about 16 oz.), chopped

1 c. cherry tomatoes, halved

1/3 c. crumbled feta cheese

4 slices of canned pineapple, chopped

2 apples, peeled, cored and chopped (I used Granny Smith apples)

1 bunch green onions, chopped

1 cucumber, sliced thin

1 tsp. salt

1 tsp. sage

¼ tsp. pepper

 

             Trim and discard the root end of the turnip greens.  Place the turnip greens, spinach, tomatoes, feta cheese, pineapple, apples, green onions and cucumber, into a bowl.  Sprinkle on the salt, sage and pepper.  Top with your favorite dressing and then toss to coat. 

 


 

             We have even added in some yellow squash, carrots and zucchini.  The possibilities of add-ins are endless and are just what you and your family prefer.

 A serving is about 1 ¼ cups and each serving has about 18 carbs.

 We like to top this salad with either my Homemade Oil and Vinegar Dressing or my HomemadeItalian Dressing.  So good!

 


 

 Serve this salad on its own or pair it with my Hawaiian Pizza or a lovely Porterhouse Steak
