Easy Pizza Quesadillas Recipe

             


    My boys LOVE pizza and while we try to have homemade pizza made with our homemade crust and homemade sauce, sometimes I am pushed for time or lack the energy so we make up these easy pizza quesadillas.  All the goodness of pizza but it is ready in just a few minutes. 

 


 

  • 8 flour tortillas
  • 16 oz. pizza sauce
  • 8 oz. shredded mozzarella cheese
  • 6 oz. pepperoni slices
  • ½ tsp. oregano

Heat up a skillet over medium heat and then lightly fry up the pepperoni to give it a bit of crispness.  This part is not necessary but we think they taste better when doing this step.

Take a tortilla and spread about a teaspoon or so of pizza sauce over each one. Sprinkle on some of the shredded cheese, followed by pepperoni slices and then a bit more cheese.  Take a 2nd tortilla and spread some pizza sauce on it and then put it sauce side down on top of the tortilla with the cheese and pepperonis.  Repeat with the other tortillas so when you are done, you have 4 total. 

Heat up your skillet again over medium heat and add a bit of butter and when it is melted and the skillet is hot, carefully place the quesadilla in the skillet and cook for about 3 minutes a side.  You want the cheese to be completely melted and the tortillas gently browned.

Slice each quesadilla into for equal pieces and serve.  It is go great to have a bowl of pizza sauce heated up or some ranch dressing to dip the quesadillas into. 


 

Serves 4 and each serving has about 35 carbs.

You can substitute the pepperoni with ground beef or any other meat and/or topping of your choice.  We love to have these with some Italian Flat Bread and some homemade Cherry Limeade.  Yum!
