Tater Tot Chicken Pot Pie Casserole Recipe

         


  Our family LOVES Tater TotCasseroles.  We make the basic Tater TotCasserole but we also make Pizza Tater Tot Casserole, Mexican Tater TotCasserole, and Sloppy Joe Tater Tot Casserole.  It’s hard to pick a favorite and we are always wanting to stretch the imagination so I thought let’s try a Chicken Pot Pie but instead of topping it with biscuits, let’s top it with Tater Tots and we ended up with this lovely creation.

    Now that you've seen some of our other tater tot casseroles, let me show you how to make this chicken pot pie version.

 

Tater Tot Chicken Pot Pie Casserole

 


  • 32 oz. bag frozen tater tots
  • 21 oz. can cream of chicken soup
  • 16 oz. bag frozen mixed vegetables
  • 4 c. cooked and shredded chicken breast
  • 1 ½- 2 c. shredded cheese (I use cheddar or a Colby Jack blend)
  • ½ c. milk
  • ¼ c. butter, cut into thin pats
  • 1 tsp. dried onion
  • ½ tsp. garlic powder
  • ½ tsp. thyme
  • Salt & pepper to taste
 

    Preheat your oven to 350 degrees. Spray a large casserole dish or 9”x13” cake pan.  Set aside.

In a large skillet or saucepan, combine the cream of chicken soup, milk, butter, driedonion, garlic powder and thyme together.  Also, add salt and pepper to your likeness.  

 

 

 Heat up over medium heat until it is heated all the way through.Remove from the skillet/pan from the stove and stir in the mixed vegetables, chicken and the cheese. 

  Pour all of it into your casserole dish/cake pan and top with the tater tots.Place it into the oven and allow it to bake for 25-30 minutes or until the tater tots are nicely browned. Serve and enjoy.

 

Serves 6 with each serving having about 60 carbs. 

 

I like to serve some rolls and iced tea with this and then finish off the meal with a piece of spice cake.
