These pumpkin cookies are a taste of Fall in every bite. Everyone just goes on and on over how much they love these soft & chewy cookies. They are a real treat that melts in your mouth.
Old-Fashioned Soft & Chewy Pumpkin Cookies
2 c. flour
1 c. oats
1 c. pumpkin
1 c. brown sugar
1 c. butter, softened
1 lg. egg
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
Preheat the oven to 350 degrees.
In a medium sized bowl, combine the flour, oats, baking soda and cinnamon.
In another bowl, cream the butter and then stir in the brown sugar, egg and vanilla.
Now, stir together the contents of both bowls. Stir well and then gently stir in the pumpkin.
Form the dough into 1 1/2" balls and place on a cookie sheet. Place the balls about 2" apart. They will spread out as they bake. Bake for 24 minutes. The cookies should be lightly browned.
These are great as is or drizzle them with some cream cheese icing.
Makes 2 dozen.
