Creamy Cold Corn Salad

       

 
    We were needing something to take for Wednesday night potluck at our little church and I decided to whip up the Creamy Cold Corn Salad.  It is perfect for potlucks, BBQ's and summer picnic's at the beach.  It is super easy to make and takes just 6 ingredients which you probably already have on hand.
 
 

 

Creamy Cold Corn Salad

3 (15 oz.) cans of whole kernel corn, drained
3 medium tomatoes, diced and seeds removed (or use cherry tomatoes)
1 1/3 c. mayonnaise
1/4 c. green onions, chopped
1 1/2 tsp. dried basil
1 tsp. dill weed
1 lime (optional)

    Mix all ingredients in a small bowl.  Add salt and pepper to taste. Squirt some lime juice over the top.  Cover and refrigerate for at least 2 hours.  The colder it is, the better it tastes.  




    It is so delicious!   

     It is perfect the way it is but you can also add in some crumbled up bacon and you can also substitute half of the mayonnaise with Ranch dressing.  



This would go really well with some hamburgers or pulled pork sandwiches!
