If you are like me, there are days when I am in a rush but still want something cooked for breakfast. This recipe is the perfect solution! The eggs turn out beautifully! They are not rubbery…they are fluffy, creamy and delicious.
In less than 2 minutes you can have a protein rich breakfast that is cooked and can be enjoyed in just one dish. I have made these in a cup, a small bowl and even a coffee mug. It is so easy to do and clean-up is a breeze.
2 eggs2 tsp. butter
1 ½ tsp. milk
Salt & pepper (just a dash each)
We have our own chickens and love using farm fresh eggs but any eggs will do.
Spray a small bowl, mug or cup with a bit of cooking spray. Whisk the ingredients together and pour them into the sprayed bowl.
Cover with a small saucer or with some plastic wrap. Cook at 70% power for about 45 seconds. Remove the covering and cook another 30-45 seconds. Stir frequently.
The eggs are done with they look glossy. Cook them until they are ALMOST cooked through. Do NOT overcook the eggs. They will appear under cooked but they will continue to cook a bit once they are removed from the microwave.
These are great on their own but I like to serve it with a cup of pumpkin spice latte and a homemade biscuit, a blueberry biscuit or even some breakfast rice.
NOTE: My microwave is a 1000 watt microwave and I cook these eggs at 70% power but if yours is a different wattage, you may have to play around with the power and cooking time.
