Loaded Cheesy Tater Tots

   

    Tater tots are so good!   They start off as just some shredded potatoes but then they are transformed into a crunchy, delicious little bite. Tater tots are great on their own or they can be used to make really delicious casseroles.  

    Today, we are making these loaded cheesy tater tots which make a great snack or you can serve it as a meal along side of hamburgers or even with meatloaf!  Not only is it super simple to make but everyone in my family loves them.   They are also super versatile because you can choose what you put on top of them.


Loaded Cheesy Tater Tots

 1 bag Tater Tots (28-32 oz.)

2 c. shredded cheese (we use cheddar or a a blend)

1 c. fresh diced tomatoes

1/2 c. sour cream

6 slices cooked and crumbled bacon (about 1/2 cup)

2 T. ranch dressing

1 tsp. salt

1/2 tsp. pepper

Optional toppings:  jalapenos, cilantro, chives or even black olives)

    

    Preheat your oven to 450 degrees. Line a baking pan with parchment paper and spread out the tater tots evenly in the pan.  Bake for 10 minutes.  Turn the tater tots over and bake for another 10 minutes or until the tater tots are golden brown.  As they are cooking, get a small bowl and mix together the sour cream, ranch, salt and pepper.  

    Sprinkle on the bacon and the cheddar cheese and bake for another 5 minutes or until the cheese has melted. 




     Remove from the oven and drizzle the sour cream mixture over the top.  Serve and enjoy.
