We eat a lot
of chicken at our house. It is a rather frugal cut of meat and since we raise
our own chickens, we can just butcher a chicken or two when we need some.
Whether you butcher your own chicken or buy chicken from the store, this recipe
will brighten and enhance any chicken you use.
The ingredients needed for this recipe are ingredients you probably
already have in your home pantry.
- 2 T. brown sugar
- 1 T. paprika
- 2 tsp. oregano
- 1 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- ½ tsp. onion powder
Combine the ingredients and stir until the mix is well blended. Use 1 tablespoon of rub for each pound of chicken. This seasoning is enough to season 5 pounds of chicken. I have used this on whole chickens, breasts, thighs and legs. It works with any cut of chicken that you want.
Rub the chicken with a bit of olive oil and then rub the seasoning generously over your chicken. Place the chicken into the refrigerator and let it sit for at least an hour. I usually like it to sit for 3-4 hours for the best flavor. Remove and cook the chicken as you desire. Any rub that has come into contact with the chicken has to be discarded. Any unused seasoning can be stored in a mason jar or baggie in your pantry for 6 months.
