I love no-bake desserts and one of my favorite no-bake desserts is this Old fashioned Chocolate Icebox Cake. I recently shared a different Icebox Cake but this is a bit different. Both are good but my boys prefer this one because of the chocolate pudding that adds a more luxurious taste that is hard to resist.
· 1 ½ c. milk
· 1 c. whipped topping (homemade or similar to Cool-Whip)
· 1 pkg. chocolate wafer cookies
· 1 sm. pkg. chocolate instant pudding
· 4 oz. cream cheese, softened
· 4 oz. semi-sweet chocolate, melted and cooled
In a large mixing bowl, put the softened cream cheese in and gradually add in the milk. Be sure to beat well after adding a bit of milk. Once all the milk is in and it has been blended well, add in the dry pudding mix and the melted and cooled chocolate. Beat for one minute. Fold in the whipped topping.
Line a large bread pan (8”x4”) with parchment paper. Be sure to have parchment paper where it comes up and over the sides so it will be easy to remove the cake from the pan after it is done.
Take the wafer cookies and line the bottom of the pan. Cover with about a third of the pudding mixture. Repeat the layers two more times. Top with remaining cookies and refrigerate overnight.
When ready to serve, use the edges of the parchment paper to remove the cake from the pan and slice and serve.
Add in some espresso powder to the pudding mixture to make your cake “mocha” flavored.
