Delicious homemade jam that is quick and easy to make. It is sugar-free, Keto friendly, and low carb so it is great for many different diets. Blueberries are high in vitamins and antioxidants so feel good about spreading some of this tasty jam onto some yogurt, pancakes or waffles.
· 7 c. frozen, unsweetened blueberries
· 1 c. unsweetened fruit juice (apple or grape)
· 1 box no-sugar needed pectin
· 1 ½ tsp. liquid Stevia
Place the frozen blueberries into a microwave safe bowl and microwave on defrost for 4-5 minutes. Take the blueberries and using a potato masher, mash the blueberries, retaining any juice squeezed out. Place this mixture into a large pot and add in the juice and pectin. Stir well and then stir in the Stevia. Put the pot on a burner on high and bring to a boil, stirring constantly. Once it comes to a boil, let it boil for 3 minutes. It has to be boiling (aka bubbling) for the entire 3 minutes and you must constantly stir.
Once 3 minutes has elapsed, turn off the stove and remove the pot from the heat. Skim off any foam that may appear. Ladle into ½ pint prepared jars while leaving ¼” headspace. Wipe the rims and put the lids and rings on. Process in a water bath canner for 10 minutes.
Makes five ½ pint jars.
There are roughly 3 grams of carbs per tablespoon.
Goes great on a piece of homemade bread or a homemade biscuit!
