Pumpkin Marble Bars

    These bars turn out super moist.  They combine the taste of pumpkin bread with the taste of cheesecake for a taste that will leave you begging for more. 

16 oz. pumpkin

8 oz. cream cheese, softened

2 c. flour

1 ¾ c. sugar

½ c. oil

3 eggs

2 T. baking powder

2 tsp. cinnamon

1 tsp. baking soda

 

            Preheat your oven to 350 degrees. Grease and flour a 11”x10”x1” jelly roll pan.

 


            In a large bowl, mix together the pumpkin, 1 ½ cups of the sugar, oil and 2 of the eggs.  Blend well.  Add in the flour, baking powder, cinnamon and baking soda.  Mix well. 

             In another bowl, combine the softened cream cheese, the remaining ¼ cup of sugar and 1 egg until well blended. 

             Spoon the pumpkin mixture into the prepared pan.  Spoon the cream cheese mixture over the pumpkin mixture.  Cut through the batter with a knife several times to get the marble effect. 

             Bake for 27-29 minute.  Allow to cool and then cut into bars.  Makes about 2 dozen.
