Hot Fudge Cake

       This is a yummy cake that is not too sweet.  It is a perfect finish for an already good meal.  It pairs so well with a bowl of cold vanilla ice cream or a cup of coffee.



Hot Fudge Cake

3 c. sugar
2 c. flour
6 eggs
3 sticks of butter, softened
1/2 c. cocoa powder, plus 1 T.
1 tsp. salt
1 tsp. vanilla

      Preheat your oven to 350 degrees.  Spray a 9"x13"cake pan.  Set aside.
 
      In a large bowl, cream together the butter and sugar until fluffy.  Be sure to HAND MIX this recipe and do not be tempted to use a mixer.  Hand mixing it will allow the cake to remain gooey and not turn out all "cake like".  

      Add in the eggs and vanilla.  Stir and then add in the cocoa, salt, and flour.  Mix well.

      Pour mixture into a cake pan and spread it out.

  Bake for 33 minutes.  Allow to cool slightly before serving.

As you can tell, we often do not always even frost this cake.  It's good enough on its own.  You can dust with powdered sugar if you like or drizzle on some chocolate syrup.   Yum!
 
     It is perfect on its own but you can raise it up a notch by topping it with some Homemade Whipped Cream Topping.
