Corn is my 2nd favorite vegetable (following closely behind potatoes). We love to eat corn but I am always trying to find new ways to prepare it. Today, I am sharing my recipe for Parmesan ranch corn. It is super easy to make and is packed full of flavor.
- 3 c. frozen corn
- ½ c. shredded Parmesan cheese
- 2 T. butter
- 1 T. ranch dressing mix
- Salt & pepper, to taste
Heat up the corn with the butter as you normally would. Once hot, stir in the Parmesan cheese, ranch dressing mix and salt & pepper. Stir well and serve. Wasn’t that easy?!?
To change up this recipe, instead of using Parmesan, try some shredded cheddar cheese, shredded mozzarella cheese or shredded Colby Jack cheese. We have tried it with all 3 and all 3 are delicious and love the variety of tastes that come from each type of cheese.
Serves 6 with each serving having roughly 20 carbs.
