This makes a great meal that can be served on its own or serve it with a side of guacamole. It is super easy, super-fast, and super tasty!
- 1 lb. ground beef (I used 80/20)
- 1 ½ c. uncooked instant rice
- 1 ½ c. shredded Mexican style cheese blend
- 1 ½ c. frozen corn
- 1 ½ c. beef broth
- 1 can (14.5 oz.) petite diced tomatoes
- 1 T. taco seasoning
- 1 T. dried chopped onions
- ½ tsp. garlic powder
- ¼ tsp. salt
- ¼ tsp. pepper
In a large skillet, brown the hamburger meat with the chopped onions and garlic powder. Once the meat is browned, do not drain. Stir in the taco seasoning.
Add in the rest of the ingredients. Bring to a boil, then reduce heat. Simmer with the pan covered until most of the liquid is absorbed. It will take probably 5-7 minutes.
Remove from heat. Fluff with a fork, serve and enjoy.
Serve with a piece of crusty bread.
