Parmesan Roasted Carrots

      


    I enjoy carrots but to my boys, carrots are a bit boring and they usually can take them or leave them.  This is a way that I cook carrots to make my boys get a bit more excited about this all-purpose veggie.  I think you and your family will love these because they really do taste amazing.

  • 2 lbs. carrots, peeled and sliced lengthwise
  • ½ c. Parmesan cheese
  • 1 ½ T. olive oil
  • 1 tsp. minced garlic
  • 1 tsp. parsley flakes
  • ½ tsp. thyme
  • ½ tsp. salt
  • ¼ tsp. pepper

Preheat your oven to 425 degrees.  Line a cookie sheet with parchment paper and set aside.

In a large bowl, toss together all of the ingredients.  Be sure the carrots are coated well and then lay them out in a single layer onto the cookie sheet. Bake for 17-19 minutes or until the carrots are tender.  I generally turn the carrots over half way through cooking to be sure they cook evenly.  

 


 

Serves 6 with each serving having about 15 carbs. 

 

             We love using carrots in our Old Fashioned Beef Stew or served with a Roast and potatoes.
