Old fashioned Chocolate Icebox Cake

     I love no-bake desserts and one of my favorite no-bake desserts is this Old fashioned Chocolate Icebox Cake.  I recently shared a different Icebox Cake but this is a bit different.  Both are good but my boys prefer this one because of the chocolate pudding that adds a more luxurious taste that is hard to resist.

·        1 ½ c. milk

·        1 c. whipped topping (homemade or similar to Cool-Whip)

·        1 pkg. chocolate wafer cookies

·        1 sm. pkg. chocolate instant pudding

·        4 oz. cream cheese, softened

·        4 oz. semi-sweet chocolate, melted and cooled

 

In a large mixing bowl, put the softened cream cheese in and gradually add in the milk.  Be sure to beat well after adding a bit of milk.  Once all the milk is in and it has been blended well, add in the dry pudding mix and the melted and cooled chocolate.  Beat for one minute.  Fold in the whipped topping.

 Line a large bread pan (8”x4”) with parchment paper.  Be sure to have parchment paper where it comes up and over the sides so it will be easy to remove the cake from the pan after it is done.

 Take the wafer cookies and line the bottom of the pan.   Cover with about a third of the pudding mixture.  Repeat the layers two more times.  Top with remaining cookies and refrigerate overnight.

 When ready to serve, use the edges of the parchment paper to remove the cake from the pan and slice and serve.  

 


         Add in some espresso powder to the pudding mixture to make your cake “mocha” flavored.

Old fashioned Icebox Cake

     I love no-bake desserts  and one of my favorite no-bake desserts is this Old fashioned Icebox Cake.  Layers of cookies and whipped cream that transform into a delicious dessert.  Very light and refreshing.  Be sure to check out my recipe for the chocolate version of this cake:  Chocolate Icebox Cake.

·         2 c. heavy whipping cream

·         ¼ c. grated chocolate or chocolate curls

·         1 pkg. chocolate wafer cookies (about 9 oz.)

·         3 T. powdered sugar

·         2 tsp. vanilla

 

  Put the heavy whipping cream into a mixing bowl and beat on medium speed until the whipping cream begins to thicken. Once it is beginning to thicken, add in the powdered sugar and vanilla.  Continue to beat the mixture until stiff peaks form. 

 Take some of the whipped topping you just made and spread a line of it along a serving plate.  Now take each cookie and spread about a ½” layer of whipped cream onto one side and place the cookie (dry side down) onto the smeared whipped cream forming a line and then as you go along add to the layers.  Continue doing it this way to form a log or square, depending on the shape of your plate or dish that you are using.  Once all the cookies are placed, cover with the last of the whipped cream mixture and decorate with the grated chocolate.  Cover and refrigerate overnight.
