I recently shared a recipe for Tzatziki Sauce but many people do not know that you can do a bit of tweaking of the recipe to turn it into a chilled tzatziki soup. It makes for a perfect dinner on a warm evening and helps to rehydrate you.
To make the soup, begin with my recipe for Tzatziki sauce. The recipe can be found by clicking here.
Add to the prepared tzatziki sauce:
- One additional cucumber, diced
- 1 c. vegetable stock
- 1 c. buttermilk
- 2 boiled potatoes, diced (optional)
Mix all the ingredients together and refrigerate for 2-3 hours before serving.
