This lemon curd recipe is so wonderful. It has such a rich flavor that is sweet, tart
and tangy all at the same time. It
really is such a lovely condiment that is quite versatile. If you have never had lemon curd then you are
in for a delicious and luscious treat!
- 1 c. sugar
- ¾ c. lemon juice
- ¼ c. butter, cubed
- 3 lg. eggs
- 1 T. grated lemon zest
In a small saucepan, whisk together the sugar, lemon juice and eggs over medium heat until blended. Add in the butter and lemon zest. Be sure to whisk constantly and cook until the mixture thickens. You will know it is thick enough when it sticks to the back of a metal spoon. It will probably take 5-6 minutes. Once it has thickened, transfer the curd to a bowl and allow it to cool for 10-15 minutes and then refrigerate until it is nice and cold.
Store covered in the refrigerator for up to 2 weeks.
For a different tang, use lime juice and lime zest in place of the lemon juice and lemon zest.
Great as a filling for homemade doughnuts.
Or smear on a homemade biscuit.
Or top your pancakes with some.
