Country Style Creamed Peas & Potatoes

    This recipe produces a super tasty and versatile side dish.  It truly is comfort food at its finest! A real crowd pleaser. 


 

  • 1 lb. new potatoes or Yukon gold potatoes, cut into bite sized pieces
  • 2 c. milk
  • 2 c. peas (fresh or frozen)
  • ¼ c. all-purpose flour
  • 8 oz. bag pearl onions
  • 3 T. butter
  • Salt & pepper, to taste

  In a medium saucepan, boil the potatoes in salted water, just until they are fork tender.  Once done, drain the potatoes and set them aside.  Now boil the pearl onions, following the package directions.

       In another medium saucepan, melt the butter over medium heat.  Once the butter has melted, slowly whisk in the flour. You may not need all the flour. You just need to add enough until it becomes doughy.  Now start whisking in the milk and continue until it becomes creamy and smooth.  You want a gravy consistency.  Add in the salt, pepper and peas and bring to a slight simmer.  Fold in the potatoes and onions and then serve.

            Makes a terrific side dish to steak fingers.


 

            Compliments brisket really well.
