These homemade crispy seasoned potato wedges turn out golden
brown on the outside and flaky and tender on the inside. This is a family favorite and we often serve
these in place of homemade French fries or homemade fried potatoes. Since they are baked, they are a healthier
alternative. Serve them with ketchup or in garlic aioli.
- 4-6 lg. baking potatoes (about 2 lbs.), peeled and cut into wedges
- ¼ c. olive oil
- ¼ c. Parmesan cheese
- 1 ½ tsp. seasoning salt
- 1 tsp. rosemary
- ¼ tsp. pepper
- Pinch of onion powder
Preheat your oven to 450 degrees.
Place your cut wedges into a gallon sized baggie. Add in the oil and shake the bag to get all the wedges coated. Once they are well coated, place the wedges, in a single layer, onto a baking sheet. Sprinkle the wedges with Parmesan cheese, seasoning salt, rosemary, pepper and the pinch of onion powder.
Bake for about 35 minutes or until the potatoes are fork tender and golden brown.
I serve these crispy seasoned potato wedges with hamburgers.
They also go lovely with a steak.
