This recipe produces tender, flavorful chicken that makes a perfect dish for Taco Tuesday or any other day of the week. It is simple to prepare and makes a lip-smacking dish.
· 4 boneless, skinless chicken breasts
· 1 c. buttermilk
· 2 limes
· 4 T. homemade taco seasoning or 2 pkgs. store-bought taco seasoning
Preheat the oven to 350 degrees. Grease a 9”x13” cake pan. Set aside.
Marinate the chicken in the buttermilk for one hour in the refrigerator. Remove and place one piece of the chicken at a time into a baggie. Pour in the taco seasoning and shake the bag to thoroughly coat the chicken. Repeat with the other pieces.
Preheat the oven to 350 degrees. Grease a 9”x13” cake pan. Take the coated pieces of chicken and lay in the pan and squeeze lime juice over the top of the chicken and then bake for 30-35 minutes. When done, juices should run clear and temperature of the chicken reaches 165 degrees.
This chicken is so good. I love to serve Mexican street corn, Spanish rice and a glass of Southern style sun tea with it.
