After trying every variation and recipe I could find for homemade chocolate pudding out there, I finally discovered the secret to rich, chocolate flavor and silky smooth texture in a recipe I concocted.
- 3 c. whole milk
- 2/3 c. sugar
- 1/2 c. chocolate chips
- 1/4 c. cornstarch
- 1/4 c. cocoa powder
- 4 egg yolks
- 4 T. butter
- 2 tsp. vanilla
- 1/4 tsp. salt
Whisk the sugar, cornstarch, cocoa powder and salt together in a medium saucepan.
In a medium bowl, whisk the egg yolks until they are smooth. Once the yolks are blended well, whisk in one cup of milk. Continue to whisk until the mixture is uniform in color, making sure that the yolks and milk are completed mixed together. Pour this mixture in with the sugar mixture. Stir in the rest of the milk and whisk thoroughly.
Heat up the saucepan over medium heat. Continue to whisk the mixture gently until the mixture begins to simmer. When the pudding begins to simmer and thicken, turn the stove down to low and continue to whisk for another 30-45 seconds or until the pudding has the right consistency.
Remove the pan from the stove and stir in the chocolate chips and butter until they are melted. Stir in the vanilla. Add the pudding to a bowl and cover with plastic wrap to prevent the pudding from skinning over.
Refrigerate for about 4 hours or until chilled. Serve and enjoy. It is great when topped with homemade whipped cream!
