I absolutely love these corn fritters. Some people call them corn poppers but I don’t care what you call them, just call me when there are some around because they are so darned yummy. They are also super easy to make too!
· 1 c. pancake mix (homemade or store bought)
· ¼ c. milk
· 1 (12 oz. ) can whole kernel corn, drained
· 1 lg. egg, beaten
· Oil for frying
In a large bowl, stir all the ingredients together. Once the oil is hot, turn down the stove to medium and then drop the batter carefully into the oil by spoonfuls and fry until golden brown (about 3-4 minutes). Drain on paper towels and enjoy. Easy peasey!
