These creamy, cool icebox sandwiches truly are super easy to prepare and your whole family will love these yummy, sweet treats!
- 1 (3.4 oz.) pkg. instant vanilla pudding mix (or any flavor you desire)
- 24 graham crackers, halved (or chocolate graham crackers)
- 2 c. cold milk
- 2 c. whipped topping
- 1 c. mini semisweet chocolate chips
In a bowl, mix together the pudding mix and the milk, according to the package directions. Place into the refrigerator until the pudding is set. Fold in the whipped topping and the chocolate chips.
Put your 12 of your graham cracker halves onto a sheet pan. Put about 3 tablespoons of the pudding mixture onto each half and top with another half of graham cracker. Wrap each individual sandwich in plastic wrap and freeze until firm, which should take about an hour. Serve frozen or chilled. Personally I think they are so much better frozen.
Makes 24 sandwiches and each sandwich has about 24 carbs.
