Hawaiian Fried Rice

Fried rice is a delicious and easy weeknight meal.  This is a fun twist on classic ham fried rice.  It’s loaded with sweet pineapple, veggies and Spam and tastes so much better than take out!  The perfect sweet and salty meal which is one reason that it’s always a huge hit at potlucks. 

 

 

  • 3 c. cooked rice, (leftover rice works great)
  • 2 c. Spam, cubed
  • 1 c. pineapple chunks
  • ¼ c. soy sauce
  • 3 eggs, beaten
  • 1 red bell pepper, chopped and seeds removed
  • 1 green onion, diced
  • 1 T. sesame oil
  • 1 T. vegetable oil (I used canola)
  • 1 T. chopped onions
  • 1 tsp. ginger
  • ½ tsp. minced garlic
  • ½ tsp. black pepper
 

Heat up the vegetable oil in a large skillet over medium-high heat. Add in the Spam, bell pepper, onions and garlic and cook for about 2 minutes.  Lower the heat down to medium.  In a bowl, place the rice in the bowl and stir in the soy sauce and sesame oil to be sure the rice is well coated.  Pour the rice into the skillet with the ham.  Cook for about 3 minutes and do not stir.  This allows the rice on the bottom to get a bit crispy which is wonderful for this dish.

After 3 minutes, scoot everything to one side and scramble the eggs on the other side.  Once the eggs are scrambled, add in the rest of the ingredients and stir well.

Serve and enjoy.
