How to Cook Perfect Mashed Potatoes Every Time

   

 
    Our family loves mashed potatoes.  I used to think there was not such a thing as bad mashed potatoes but have found out, that sadly is not true.  I have tasted super dry mashed potatoes; soupy mashed potatoes; bland mashed potatoes, gummy mashed potatoes, etc.  Today, I am going to teach you how to make perfect mashed potatoes every time.  My techniques will show you how to whip up a batch in no time that turn out fluffy, light and buttery!




Perfect Mashed Potatoes 

6 lg. russet potatoes
1 box (32 oz.) chicken broth
1 c. milk
1/2 c. sour cream
1/2 c. butter
1/2 tsp. salt
1/4 tsp. pepper

    First scrub your potatoes to remove all dirt.  Next, peel your potatoes and cut them into uniform chunks.  By cutting them all basically the same size, you ensure that the pieces get done all at the same time.  If you cut your potatoes and they are all different sizes then some will be done, some might be mushy and others not quite done.  Cut uniformly to get them to cook uniformly.  

     Place the potatoes in a pot.  Pour in the chicken broth and add enough cold water to cover the potatoes.  (Cooking your potatoes in chicken broth gives the potatoes so much flavor.)  Turn your stove onto medium and bring your potatoes to a small boil and then turn to simmer and allow them to simmer for 20 minutes.  Drain and return the potatoes to the pot.  

  
     In a small pot, put your milk, butter, salt & pepper.  Turn the heat onto medium-low and gently heat them up.  Stir often and don't let the milk scald.  When they are slightly hotter than warm, pour them in with your potatoes.  Adding them in warm ensures you will serve your family/guests warm potatoes and not cold ones. 

    Using a potato masher, mash up your potatoes thoroughly.  Add in a dollop of the sour cream.  Use your mixer to whip them up the rest of the way.  But do NOT over-mix. Potatoes are made of starches and starches do not like to be overmixed.  Just like you can overwork bread dough, the same is true of potatoes.  Remember the gummy mashed potatoes I mentioned earlier.  They become gooey from overmixing the potatoes. If they are too thick, add in a bit more of the sour cream.  Using a mixer, mix on low until the potatoes are smooth, light, and fluffy.   Serve immediately.  Serve it like this or top it with some of my chicken and noodles, mushroom gravy or delicious chicken gravy!

Wonderful Side Dishes for your Easter Meal

           


     If you are hosting Easter Dinner at your house and are looking for the perfect side dishes to serve, then you have come to the right place.  Each of these recipes are family-tested and are tried and true recipes that are sure to please each of your hungry guests. 

    Super flavorful casserole that will be a hit at your dinner table. 



 
    Creamed peas are one of those recipes that remind me of when I was a child.  It is a super comforting dish that is simple to make but is delicious for any day of the week or as a lovely side dish to a holiday meal.  We enjoy it so much that I serve it several times a month.

   This is a really quick and delicious way to cook green beans.  My youngest son who is autistic doesn’t really care for green beans but if I cook them this way, he loves them.  He said just plain green beans are boring but these have so much flavor.  
 
      My recipe yields some real creamy mac & cheese that my menfolk could not resist. It heats up wonderfully without losing the texture or creaminess so the next time your family is craving some good old fashioned mac & cheese I hope you will pull out this recipe and make it for them.
 

 
     These carrots are easy to make and are so yummy.  I love the tangy taste that the orange juice provides and the ginger gives it just enough “zing” to really up the flavor profile. 
 

 
 
    This corn casserole is such a comforting side dish that is perfect for a holiday meal or any meal for that fact.  It truly is one of my personal favorite side dishes of ALL TIME!  It is very easy to make and tastes so delicious and creamy.

Dehydrating Potatoes for Long-term Storage

  
 

 I love to dehydrate foods.  Dehydrated foods are great for long term storage and they take up a lot less space than freezing or canning.  Today, I will teach you how to dehydrate potatoes.  Ten pounds of potatoes, once dehydrated, will fit into just 3 quart jars.  Talk about space saving!

   First, wash your potatoes.  Once washed, you may peel the potatoes, but generally, I just leave the skins on.  More nutritious this way and it eliminates a step if you do not peel them.  Now, get your mandolin out.   Just slice your potatoes.  I use the "medium slice".

    As you slice your potatoes, have a pot of water on the stove heating up.  Once the water begins to boil, drop the potatoes into the water and let them boil for just 3 minutes.

    Once they have boiled for 3 minutes, drain them and run cool water over the potatoes to stop the cooking process.  Then just lay the potatoes out onto your dehydrator trays and dehydrate.  I turn on my dehydrator on before I go to bed and the potatoes are done the next morning. Place in a clean mason jar with a lid and store in a cool, dry area.



    These actually are peeled but like I said previously, generally, I don't even bother to peel them.  To reconstitute, just take the desired amount of potatoes and place in a pot or bowl and add enough of really hot water to cover the potatoes.  Let set 10 minutes and they are ready to use.   
 
 
These can be added to soups, stews, or casseroles, make some au gratin potatoes or you can pan fry or even mash for mashed potatoes.

Old Fashioned Potato Candy Recipe

    Old fashioned potato candy is a recipe that has been around for years.  I remember being a young girl and watching my Mom make it and now I make it for my own children.  The recipe is super easy to make. Other than getting the consistency correct, there is no other way to mess it up.  It is a no-bake candy that was highly popular during the Depression because it was so inexpensive to make.  And for those of you who have never heard of potato candy...no it does NOT taste like mashed potatoes.  It just tastes so good and it's addicting.  You'll keep going back for more!

   Old Fashioned Potato Candy Recipe

 1/2 c. mashed potatoes (leftover mashed potatoes work great)
2/3-1 c. creamy peanut butter
1 tsp. vanilla

     Combine your mashed potatoes and vanilla in a bowl.  Add in 4 cups of powdered sugar and mix well.  Continue to add in the powdered sugar, a cup at a time, until the mixture becomes thick.  It took 6 total cups for ours.  The "dough" needs to be thick like cookie dough.

     Once the consistency is right, lay out a piece of wax paper (or parchment paper) and sprinkle some powdered sugar on it.  Roll out your mixture to about 1/4" thick.

      Spread the peanut butter out over the entire dough.  We really don't measure out the peanut butter. We just spread it out to the edges and use however much it takes.

    Roll up the "dough" as you would cinnamon rolls.

    Wrap the roll in waxed paper and refrigerate for 30 minutes.  Remove, slice and enjoy!

Crock Pot Scalloped Potatoes

             


        These crock pot scalloped potatoes are so easy to make and turn out extra cheesy and delicious! 

         My family loves these potatoes and we often pair it up with a yummy meatloaf.  These two together create a perfect comfort food that your whole family will enjoy. 

·         3 lbs. potatoes, peeled and sliced thin or use dehydrated potatoes

·        2 c. cheddar cheese, divided

·        1 ½ c. heavy cream, divided

·        1 can cream of chicken soup (10.5 oz.)

·        3 T. dehydrated onions

·        ½ tsp. pepper

·        ½ tsp. garlic powder

·        Chives, optional

 

Spray the inside of your crock pot with cooking spray.  Turn your crock pot onto high.

Place half of the potatoes into the bottom of the crock pot and then sprinkle on the onions.

 In a bowl, combine 1 cup of the cheese, 1 cup of the heavy cream, the cream of chicken soup, pepper, and garlic powder.  Stir to combine and the pour half of the cheese mixture into the crock pot.  Add in the remaining potatoes, then the rest of the cheese mixture and a half cup of the heavy cream.   Cover and cook for 4-4 ½ hours or you can cook it on low for 6 ½-7 hours.

 

 

 Serves 8. 25 carbs.
