Seasoned Baked Red Potatoes

One of my family's favorite side dishes is my baked red potatoes that I bake pretty often.  They are easy to do and taste delicious.

Seasoned Baked Red Potatoes

3-4 lbs. of red potatoes
olive oil
Rosemary, fresh or dry
chives, fresh or dry

Wash your potatoes and cut them into small chunks.

Just cut the potatoes in small chunks like this.

Put some olive oil in a baggie and put a few potato chunks into the baggie at a time.  Be sure each piece is coated well.  Once all the potatoes are coated well, put them in a sheet pan.

The potatoes oiled & seasoned and ready to go into the oven.

Sprinkle rosemary and the chives over the potatoes and bake in a 400 degree oven for 27 minutes.

This potatoes would go great with my Chicken ala King,  my Cheeseburger Casserole,
or even Jambalya!
