Pie Recipes for Pi Day

    Saturday is "Pi Day" and to celebrate it, I am sharing some of my favorite pie recipes.  Pi Day is celebrated each year on March 14th due to Pi equaling 3.14 so it is celebrated on 3/14.  

No Bake Strawberry Kool-Aid Pie

     This pie is cool, creamy and delicious and would be perfect for any occasion!  Not only is it delicious but it is super easy to make and requires only 4 ingredients!

    Our family loves this pie.  I try to make it when we are having special company over for dinner but my family would love to have this at least once a week.  It is a perfect pumpkin pie but elevated to a whole new level. It looks lovely and tastes delicious!

Crock Pot Apple Dump Cake


       This is the ultimate summer dessert.  Our family loves dessert but I hate turning on my oven during the hot summer months so why not make a dump cake in your crock pot?  That is what I decided to do and it turns out wonderfully and it only takes 3 ingredients, including some of my homemade and canned apple pie filling!!!
 

 
        My hubby says this reminds him of a cobbler but since the cake layer is nice and thick, I think a "dump cake" is a more appropriate name for it but call it what ever you want, it is still simple and delicious.  

Crock Pot Apple Dump Cake

1 box yellow or white cake mix
1 stick of butter

     ***Note***:   If you do not have your own canned pie filling you may use 2 (15 oz.) cans of store bought pie filling.

       Turn your crock pot onto "high" and LIGHTLY spray the bottom and sides with cooking spray.

       Pour your pie fillings into the crock pot.  Now, open up the cake mix and pour the dry mix onto the fruit.

 DO NOT STIR!  Cut up your butter and lay around the dry mix.  Again, DO NOT STIR!  Trust me on this.  It will be all right.

         Now, place the lid on the crock pot and wait.  

         Check after 2 1/2 hours and see if the cake is done.  Stick a toothpick into the center and see if it comes out clean.  If not, allow it to cook up to 30 minutes longer.  The edges will finish baking first but wait until the center is done before enjoying.

        This dessert is perfect on its own or you can enjoy it warm with a nice scoop of vanilla ice cream!






    Another great dump cake recipe is my Cherry Dump Cake or my Pumpkin Pie Dump Cake!  Both are super delicious.

Soy & Garlic Chicken

    Sometimes the most flavorful and most delicious recipe is the easiest to make with the fewest number of ingredients.  This is one of those recipes.  Three ingredients is all it takes to make this super moist chicken. 
 
   

 Soy & Garlic may not sound like it would be good together but trust me...it is MARVELOUS!!
 



Soy & Garlic Chicken

chicken breasts, quarters or legs
garlic powder
soy sauce
parsley flakes

    Place your chicken quarters into a baking pan (I used a 9" x 13" cake pan).   Pour soy sauce over the chicken pieces until they are well coated.  Now just sprinkle the garlic powder lightly over the chicken and bake at 350 degrees for 45 minutes or until chicken is done.

    Really, it is just that easy and you will not believe the taste.  This is now my husband's absolute favorite way for me to prepare chicken for him.  Try it out on your family and see if it becomes a family favorite too!

We like to serve this with our Honey Glazed Carrots.  They pair so well together!

3 Ingredient Blueberry Cobbler

    I like easy.  Easy is wonderful.  If you have a full life like I do, you do not always have time to do everything from scratch but you still want to bake for your family.  Here is one of those recipes that will make your family feel special and tastes delicious.

3 Ingredient Blueberry Cobbler

1 (21 oz.) can blueberry pie filling
12 oz. lemon-lime soda pop
1 box white or yellow cake mix

The cake mix and can of blueberries.


         Preheat your oven to 350 degrees.  Spray a 9 x 13 cake pan with cooking spray.  Open up the pie filling and pour into the  pan.  (You can use frozen blueberries instead.) Pour the dry cake mix on top of the blueberries.

The dry cake mix on top of the blueberries.
 Now slowly pour the soda pop over the top of the dry cake mix.  That's it.

Ready to go into the oven now.
Now, just put it into the oven and bake for 48 minutes.  Easy-peasy!

Homemade Soft Serve Chocolate Ice Cream Recipe

     We recently made some homemade chocolate ice cream and many people asked for the recipe.  This recipe is super simple and the ice cream comes out as a soft serve very similar to the Frosty's from Wendy's.

Homemade Chocolate Ice Cream
1/2-3/4 gallon chocolate milk
1 tub whipped topping (Cool whip)

   I used all generic brands.  Instead of whole chocolate milk, I used the 1% and it still turned out great.

    Pour 4 cups chocolate milk, the whipped topping and the sweetened condensed milk all together in a large pitcher or bowl.  Stir well.  Once it is mixed well, pour it into your ice cream freezer.  Pour in more chocolate milk until it reaches the "fill" line.  Put the paddle in place and lid.  Put machine together and add the ice and rock salt around it as your directions apply.  
 
    This comes out so good.  My family swears this is the best recipe ever and since it is so easy and only 3 ingredients is an added bonus.
 
     It is perfect on its own but you can raise it up a notch by topping it with some Homemade Whipped Cream Topping.  

      This ice cream would go wonderful with my Southern Fried Hand PiesChocolate Cobbler,  or my Death by Chocolate Cake!
