The 10 Best Soups of 2021

    The best soup recipes of 2021 are in and you'll find some classics and others that will soon become your favorites. Search the list and leave a message in the comments letting us know which one is your favorite!

    Here is the top 10 list in no particular order: 

   1.  The Ultimate Potato Soup Recipe.

     I LOVE potato soup.  To me, it is one of the most satisfying; most comforting of all soups.  This recipe makes a huge pot of creamy, delicious, and amazing potato soup.  


 

2.  Creamy Chicken Taco Soup.   

     We enjoy this creamy chicken taco soup recipe a lot.  It is quick and easy to make and tastes delicious.  I made a pot of this the other day and Bub ate the entire pot (over the course of a few days) by himself.  


3.  One Pot Chicken and Rice Soup.
     This will be one of the easiest soup recipes you will ever make.  You just have to throw some chicken, veggies, and stock into a pot and simmer until it is done.  So simple.  So easy.  It is perfect for those nights you are chilled to the bone or just not feeling well.  It will definitely pick you up!


 

4.  Super Good Chili Recipe.

        I have several chili recipes but this is, by far, the best one I make.  It is delicious!

 


 

5.  No Soak 15 Bean Soup Recipe.

     This is another meal that I shared on my Wednesday "what's for dinner" post on my Facebook page.  The post got a lot of comments and even more requests for the recipe so here it is.

 


 

6.  Ham and beans soup recipe.

        There is nothing like a big pot of beans with ham to warm you up.  It is a real staple each winter in our home.  It is filling and makes a great meal when served with some of my cast iron skillet cornbread!



7.  Old Fashioned Ground Beef Stew.

    I have nurtured and tweaked this recipe over the past 30 years and have it perfected.  It is hearty, delicious and inviting.

  


8. Homemade Tomato Soup.

   My youngest son loves tomato soup.  He would eat it every day if we would let him.  I hate him eating the store-bought variety because of all the extra ingredients and sodium that they put into it.  I prefer to make my family homemade tomato soup.
 

 
 
     I love this soup anytime of the year for any occasion but it is especially good when I have been feeling ill.  It really hits the spot and makes me feel better too.  It is a true comfort food that is scrumptious and filling. 
 

 
 
     This soup looks similar to the one above but there are distinct differences and each deserve a spot on this top 10 list.
 
    This is a thick and flavorful soup.  It is easy to put together and turns out so marvelously.  I literally LOVE this soup and eat the leftovers over the next few days for every meal until it is all gone.  It is THAT good!

Easy Chocolate Chocolate Chip Bundt Cake

 


    This is a really easy way to have a lovely Bundt cake without too much work or hassle.  It uses a cake mix and a very other ingredients and turns them into a decadent and delicious Bundt cake.  Perfect for any chocolate lover.  A very impressive dessert and goes great with a cup of coffee.

  • 1 box (15 oz.) chocolate cake mix or Devil’s Food cake mix
  • 1 c. chocolate chips (semi-sweet or milk chocolate)
  • 1 c. sour cream or plain yogurt
  • ¾ c. canola or vegetable oil
  • 4 lg. eggs
  • 1 pkg. chocolate instant pudding mix
  • 1 T. vanilla

Preheat your oven to 350 degrees.  Grease and flour your Bundt pan generously.  Set aside.

In a large mixing bowl, beat together the cake mix, sour cream, eggs, a ½ cup of warm water, pudding mix and your oil.  Beat on low, just until combined.  Then turn your mixer up to medium and beat the batter for 2-3 minutes or until it is fluffy.   Fold in the chocolate chips and then pour into your prepared pan. 

Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.  Once it is done, place the pan onto a wire rack and allow the cake to cool completely.  Once it is cooled, use a rubber spatula to loosen the cake from the pan and flip onto a plate.  You can frost with a lovely chocolate frosting or Ganache or simply dust with powdered sugar.


 

This cake can also be used with a white or yellow cake mix in place of the chocolate one. 


 Serves 12 and each slice has about 50 carbs.

Creamy Microwave Macaroni and Cheese in a Mug

     Merry Christmas everyone.  Have a blessed day!



    Ronny, my youngest son, absolutely LOVES macaroni and cheese.  He could eat it every day and never complain.  It is a pain to prepare a whole box of macaroni and cheese so I wanted to come up with a single serving mug version that he could make himself.  He is autistic but still can make this with no problem.  I also like this recipe uses real cheese and not the powdery stuff that comes with the box versions.  It is less “processed” so that is good too.

 


  • ½ c. shredded cheddar cheese
  • 1/3 c. elbow macaroni or pasta of your choice
  • 1/3 c. water
  • 2 T. milk
  • 2 tsp. butter
  • 1 tsp. Parmesan cheese
  • Salt and pepper to taste

Spray the inside of a large microwave safe mug with cooking spray.  Put the macaroni, water, and butter into the mug and microwave for 2 minutes.  After the 2 minutes, stir.  Most of the water should be absorbed by the macaroni at this point, if not, microwave in 30 second intervals until all the water is absorbed. 

After the water is absorbed, add in the shredded cheese, milk and Parmesan cheese and stir.  Microwave for 30 seconds and stir.  If the cheese is all melted, stir, sprinkle with salt and pepper and enjoy.  If it isn’t all melted, microwave for another 30 seconds or so. 


 

This makes one serving with about 20 carbs per mug.
