This soup is low in fat, very nutritious and tastes so wonderful. Layered in a jar, this makes an excellent and beautiful gift or just make it and put it in your pantry until you are ready for a filling meal. I make up a bunch and give as gifts and everyone compliments me on how good of a soup it makes and I always make a few just to keep for us to eat. I do highly recommend it because it is so tasty!

Three Bean Soup Mix
1/2 c. pinto beans
1/2 c. dehydrated vegetables
1/3 c. black beans
1\3 c. barley
1/3 c. great northern beans
1 T. chili powder
1 T. dehydrated onion
1 T. beef bouillon
1 tsp. cumin
1/2 tsp. oregano
1/2 tsp. parsley
1/2 tsp. chicken bouillon
1/4 tsp. minced garlic
Layer the spices into the bottom of the jar. Now layer the beans and then the vegetables. Place the lid on the top and store it until ready to use or gift.
To make the soup, pour the contents of the jar into a large pot. Add in 4 cups of water, 2 cups of beef broth, and 1 tablespoon of oil. Stir and add in a 15 oz. can of diced tomatoes (don't drain them). Cook on high heat and bring to a boil. Reduce heat to low and simmer for about 2 hours or until the beans are tender.
We love to top our soup with some corn chips and cheddar cheese. Add in some spicy chicken sausage to really amp up the flavor!
